Indian Rice Pilaoo with peas or mixed vegetables

(Fried Rice with peas or mixed vegetables) By Mira Dash

Ingredients:

2 cups Basmati rice
1 cup frozen peas or frozen mixed vegetables
3 table spoon vegetable oil or olive oil
1 tea spoon cumin seeds
2 bay leaves
2 cardamoms
4 cloves

To garnish:

one medium onion
Cilantro(chopped)
2 slices of lemons

Wash the rice & set it aside for 15 minutes, in a deep pan ,put the cooking oil, heat it & drop the cumin seeds. After it starts getting hot add the rice & stir it for 2-3 minutes &add the frozen vegetable ( stirring it). Add the spices , dash of salt , as soon as the rice looks white add 3 cups of warm water, bring it to a boil, reduce heat, cover it, wait about 8-10 minutes, it should be ready.

To garnish & to add further taste slice the onion & sauté it (caramelized) Serve the rice on a dish with onion , cilantro & slices of lemon on the top. Serve with yogurt & salad.

Thanks - but the beginning of each line seems to be missing. I thought is was because, being a bit short-sighted, I had the print set too high, but that's not it. Wouldn't be a problem except - cardomoms. How many of those you use can make a lot of difference.
